Tasting notes − citric colour. The wine shows fine and persistent bubble. Aroma of dried fruit and some lime. Delicate taste with elegant and harmonious finishing
Winemaking − after sorting, the fully stalked clusters fermented in stainless steel tanks with temperature control for, approximately, 20 days
Ageing – second fermentation: 12 months in bottle, being carried out then the “remuage”, to proceed with the “dégorgement”
Alcohol – 12,5%
Total acidity – 6,0 g/l
pH – 3,04
Total sugar – 1,8 g/l
Wine pairing – ideal with a piglet and white fish; also goes with any desserts
