Winemaking − manual harvest into 18 kg boxes. Completely de-stemmed with follow-up Pre-fermentation maceration for 2 days. Fermentation under controlled temperature for 15 days. Post-fermentation maceration period of 10 days

Ageing − 11 months in new French oak barrels

Alcohol – 13,5%

Total acidity – 5,54 g/l

pH – 3,70
